• Crock pot Breakfast Casserole

    Breakfast casserole in the crock pot!
    Cooks while you sleep!

    Ingredients:
    1 bag 26 oz. frozen hash browns
    12 eggs
    1 cup milk
    1 tablespoon ground mustard
    1 16 oz. roll sausage (maple, sage or regular sausage)
    Salt and pepper
    16 oz. bag shredded cheddar cheese

    Directions:
    1. Spray crock pot and evenly spread hash browns at the bottom.
    2. Crack 12 eggs in a large bowl.
    3. Mix well (and slowly) using a whisk.
    4. Add the milk.
    5. Go ahead and sprinkle in the ground mustard.
    (This might sound like a weird ingredient,
    but I've come to love (and use) this in most of my recipes.
    6. Add plenty of salt.......and lots of fresh pepper.
    Mix well and set aside.
    7. Cook the sausage on high heat, drain and set aside.
    8. Add sausage on top of hash browns.
    9. Is this enough cheese? Maybe? Probably.
    Throw the whole big bag in there.
    10. Mix it up well. Or good, depending on where you're from.
    11. Pour the egg mixture over everything in the crock pot.
    Using a wood spoon, even everything out so it's spread evenly.
    12. Turn the crock pot on low for 6-8 hours.

    Some fun variations of this recipe.

    Before cooking (during prep) you can add:
    Chunks of sourdough bread, diced chiles, salsa, diced green onions

    Title: Country Breakfast Casserole
    Categories: Breakfast, Casseroles
    Yield: 6 Servings

    12 oz Bulk pork sausage; mild or
    -spicy
    1/2 c Onions; finely chopped
    4 c Frozen hash browns; diced,
    -thawed
    1 1/2 c Colby/Monterey Jack cheese

    3 Eggs; beaten
    1 c Milk
    1/4 ts Black pepper
    Salsa

    Preheat the oven to 350 degrees. In a large skillet, cook the
    sausage and onions until no pink remains; drain. In an 8-inch square
    baking dish, layer the potatoes, half of the cheese, the
    sausage-onion mixture and the remaining cheese. In a bowl, combine
    the eggs, milk and pepper; pour over the cheese. At this point, the
    casserole may be covered and chilled overnight. Bake, covered, for
    50 to 55 minutes, or until a knife inserted near the center comes out
    clean. Transfer to a wire rack. Let stand for 10 minutes. Cut into

    Now, are they calling for Hash Browns, or diced potatoes (aka: home fries)? They are 2 different things. Hash Browns are the grated (or shredded) potatoes.

    1 cn (large) Pear halves, (1 lb,
    -13-oz. can)
    1 ts Orange or Lemon rind, ,
    -grated
    1/2 ts Lemon juice
    1 c Mayonnaise, (Hellman's)
    1 Carton (8-oz.) Cottage
    -cheese
    Grapes, (opt.)
    Salad greens

    Drain pears, reserve 1/4 cup juice. Blend reserved juice, grated rind
    and lemon juice into Mayonnaise. Arrange pear halves, cottage cheese
    and grapes on salad greens. Serve dressing on the side. Posted to
